Staphylococcus Food Poisoning
Staphylococcus aureus contaminates egg salad (usually from food handlers—skin, nose, hands).
It grows in the food and produces
The toxin acts directly on the gut and stimulates the vomiting center
This is a toxin-mediated illness, not infection
Undercooked eggs + fever + diarrhea → Salmonella
Severe gastroenteritis caused by Salmonella enterica can lead to:
Pre-renal kidney failure (most common)
- Profuse diarrhea + vomiting → dehydration
- ↓ blood flow to kidneys → acute kidney injury (AKI)
