World Coconut Day: Payasam

 

Coconut Milk/Cream

Illaneer Payasam

Ilaneer Payasam is a creamy South Indian dessert made with tender coconut (elaneer), coconut water, milk, and condensed milk. It is especially refreshing when served chilled.

🥛 Ingredients — Serves 4

• Tender coconut flesh (elaneer) – 1 cup
• Tender coconut water – ½ cup
• Full-fat milk – 2 cups
• Condensed milk – ½ cup
• Sugar – 1–2 tbsp, optional
• Cardamom powder – ¼ tsp
• Cashews – 2 tbsp
• Raisins – 1 tbsp
• Ghee – 1 tsp
• A pinch of salt – optional

Method

1. Prepare the coconut:
   Scoop out the tender coconut flesh. Keep it soft and slightly chunky rather than grinding it completely smooth.
2. Cook the milk:
   Heat the milk in a saucepan and simmer gently for 8–10 minutes, stirring occasionally.
3. Add condensed milk:
   Lower the heat and mix in the condensed milk. Simmer for another 2–3 minutes. Add sugar only if needed.
4. Cool completely:
   Remove from the heat and allow the milk mixture to cool to room temperature.
5. Add elaneer:
   Mix in the tender coconut flesh and ½ cup coconut water.
6. Flavor:
   Add cardamom powder and mix gently.
7. Garnish:
   Fry cashews and raisins in ghee until golden and add them to the payasam.
8. Chill:
   Refrigerate for 2–3 hours and serve cold.

World PCOS Day

The landmark event occurred in 1935, when American gynecologists:

• Irving F. Stein (1887–1976)
• Michael L. Leventhal (1901–1971)

published their classic paper, “Amenorrhea associated with bilateral polycystic ovaries.”

They described seven women who had combinations of:
