Mustard: A Brief Background

  • Made from the seeds of the mustard plant (genus Brassica or Sinapis).
  • Used as a spice and condiment for over 3,000 years.
  • Ancient cultures like the Romans and Indians used mustard both for culinary and medicinal purposes.

Comes in varieties like yellow, Dijon, spicy brown, and whole grain.

France’s Dijon mustard originated in the 1850s.

 

 
 
 

Yellow mustard, also called American mustard, was introduced in 1904 at the St. Louis World’s Fair.

 

 
Founded in 1991 by Jill Sengstock, a curator at the National Mustard Museum (originally in Mt. Horeb, now in Middleton, Wisconsin).
