Coconut Milk/Cream
Illaneer Payasam
Ilaneer Payasam is a creamy South Indian dessert made with tender coconut (elaneer), coconut water, milk, and condensed milk. It is especially refreshing when served chilled.
🥛 Ingredients — Serves 4
- Tender coconut flesh (elaneer) – 1 cup
- Tender coconut water – ½ cup
- Full-fat milk – 2 cups
- Condensed milk – ½ cup
- Sugar – 1–2 tbsp, optional
- Cardamom powder – ¼ tsp
- Cashews – 2 tbsp
- Raisins – 1 tbsp
- Ghee – 1 tsp
- A pinch of salt – optional
Method

Prepare the coconut:
Scoop out the tender coconut flesh. Keep it soft and slightly chunky rather than grinding it completely smooth. -
Cook the milk:
Heat the milk in a saucepan and simmer gently for 8–10 minutes, stirring occasionally. -
Add condensed milk:
Lower the heat and mix in the condensed milk. Simmer for another 2–3 minutes. Add sugar only if needed. -
Cool completely:
Remove from the heat and allow the milk mixture to cool to room temperature. -
Add elaneer:
Mix in the tender coconut flesh and ½ cup coconut water. -
Flavor:
Add cardamom powder and mix gently. -
Garnish:
Fry cashews and raisins in ghee until golden and add them to the payasam. -
Chill:
Refrigerate for 2–3 hours and serve cold.
