Red Velvet Cake: Shortened Cake

Red Velvet nicknamed the Devils food cake because of its rich colour

Devil's food cake originated in the Southern states. It was made with cocoa and beet, hence the original red color effect. The contrasting white frosting completes the effect that has been related to the contrast between 'the good' and 'the evil' (the evil being represented by a passionate red color).

The name 'devilled' dates back to the 18th century and was meant to be used for spicy foods.

The Adams Extract company attributes itself to making the “original” Red Velvet cake in the 1920s.

The Waldorf Astoria Hotel in New York City also claims it is the birthplace of the Red Velvet cake,

It is a popular menu item since the 1950s.
