Lecithin: Alcohol+Phosphoric acid+Choline



Fats are insoluble in water. Must be emulsified prior to digestion

Lecithin: Surface active agent helps in emulsification of Fats 



Emulsification 

Breakdown of fat globules in the duodenum into tiny particles 

Emulsification provides a large surface area 

Large surface area allows digestion of fat by enzyme pancreatic lipase

Digestion of fats into fatty acids and glycerol
